Announcing the Farmers Formal Menu!

While EarthDance’s staff and board members held many different visions for the fourth annual fundraiser, they all immediately agreed on one thing: delicious, locally-sourced food!

Thankfully, this wasn’t too difficult to achieve with the help of Bon Appétit Management Company at Washington University. This nationally-acclaimed on site restaurant company is committed to socially responsible food and labor practices. In early August, Fedele Bauccio, the CEO and founder of Bon Appétit, received one of the inaugural James Beard Foundation Leadership Awards for his commitment to local food and farmworkers’ rights. In the past decade, Bauccio and Bon Appétit have been advocates of sustainable seafood, rBGH-free milk, cage-free eggs, and fair trade coffee and chocolate. At Washington University’s dining halls, the chefs buy much of their food from a network of owner-operated farms within 150 miles of the campus.

For Farmers Formal, much of the produce has been donated by Farmed to Family Naturally, Double Star Farms, Burning Kumquat, and EarthDance itself! Additionally, Todd Geisert, of Geisert Farms is providing all of the pork for the smoked pork sliders. The evening’s meal will be rounded out by bread from Black Bear Bakery, fruit pies from Whole Foods Market, and dark chocolate and sea salt caramels from Kakao.

Of course, a feast of local foods can only be accompanied by local drinks! The evening will begin with “farm fresh” cocktails by Square One Brewery and Distillery, and the complimentary bar will be stocked with wine from St. James Winery and brews from Urban Chestnut and Perennial Artisan Ales. Kaldi’s Coffee will set up an espresso and coffee bar during dessert.
