San Marzano Trilogy Chili

Ingredients

1 large or yellow white onion, diced
2 yellow/orange/red bell peppers, diced
2 carrots, diced
2 celery stalks
3 mild Hatch chilies, seeded
1 hot Hatch chili, seeded
7 tomatillos
1 lemon (for zest only)
3 cloves fresh garlic, pressed or diced
2 (28 oz.) cans San Marzano tomatoes
2 (15 oz.) cans tomato sauce
1 (15 oz.) can each of black, garbanzo, & red beans
1/2 tsp smoked paprika
2 tbsp sweet paprika
1 tsp chili powder
2 tsp turmeric
olive oil
salt & pepper

Directions

Saute onion, carrot, celery & peppers in olive oil over low heat about 20 minutes. Add garlic & saute on low for 5 more minutes. Coat tomatillos and chilies in olive oil & broil 7-8 minutes, or until slightly charred. Dice tomatillos & chilies & add to the saute mixture. Stir in spices and continue to saute another 10 minutes. Stir in canned tomatoes, beans, & lemon zest & bring to a simmer. Simmer for 1 hour, stirring frequently. Remove from heat. Salt & pepper to taste. Serving suggestion: top with sharp cheddar cheese & plain Greek yogurt!
